A mere six months after receiving its first Michelin star, Daalder exchanges its famously informal setting in a former Jordaan café for a much larger location in the monumental Het Sieraad building in West. Street art, graphics, and neon contrast the Amsterdam School architectural features of this former goldsmith’s college, where chef-owner Dennis Huwaë and his team continue to craft their creative blend of internationally influenced casual fine dining.

Restaurant De Bokkedoorns was founded in 1961 and has held two Michelin stars for over 30 years. The kitchen's focus is on top-quality, mostly fish-related ingredients. Expect refined plates like grilled lobster tail with apple, razor fish mousse, and soft shell crab. Even the desserts have something fishy. What do you think of pancakes with sour cream, ice cream, and caviar? This restaurant with extraordinary views just outside Haarlem is well worth the trip.

One of the more recent additions to Amsterdam’s Michelin list, De Juwelier is the latest project of chefs Richard van Oostenbrugge and Thomas Groot, the mastermind duo behind two-starred Restaurant 212. The bistro-style decor is both relaxed and chic, while the a la carte menu features a wide range of Franco-inspired dishes with an emphasis on seafood.

Restaurant De Kas is located in what is essentially a giant 1920s greenhouse that grows its own produce. Enjoy an unforgettable culinary experience based on fresh, seasonal produce with menus that are created daily depending on what’s been picked from the garden that same day. During nice weather, you can dine outside in the herb garden.

The brainchild of head chef Lars Scharp, Lars is all about exceptional French cuisine supplemented by Asian influences. RIJKS*

RIJKS, the restaurant of the Rijksmuseum, offers a locally sourced menu that complements a lengthy stroll through the museum rooms. RIJKS' kitchen upholds the principles of Slow Food, an organisation that promotes regional cuisine, and the Ark of Taste, which encourages the use of local ingredients. Platters highlighting regional fish or meat — gurnard or pigeon, for example — are available, as are artisanal cheeses. Afterwards, head to one of RIJKS’ four espresso bars for a coffee with a dash of the Dutch liqueur advocaat.

Ron Blaauw offers acclaimed, stylish gastronomical dining with an accessible twist: surprising (and surprisingly affordable) menus for a variety of occasions. At this restaurant, it’s all about enjoying the experience, offering delicious food with a French/international theme. Main courses start at €15—not bad for a restaurant that was awarded a Michelin star in autumn 2013.

The two-star Michelin restaurant in Amsterdam’s Waldorf Astoria branch combines the delights of the countryside with the atmosphere of urban surroundings. Located on the lower ground floor of the Waldorf Astoria Amsterdam, Spectrum offers beautiful views of the courtyard garden. Bistro de la Mer*

With its large oyster bar, French brasserie menus on the walls, and retro tableware, this cosy bistro transports you straight to Paris. Directly after their opening, they got a Michelin star, being praised for its delicate reinterpretations of classic (fish) dishes. Richard van Oostenbrugge and Thomas Groot are also owners of Restaurant 212** and De Juwelier*, so they know what they're doing. Also noteworthy: all dishes can be ordered a-la-carte.
