Chef Walter Marskamp of restaurant Yerba, near the Museumplein, does things differently than most of his colleagues. His kitchen is all about vegetables and all edible parts of plants are used to make the tastiest (vegan) creations.

The menu of this sustainable, 'plant forward' restaurant is seasonal and changes. For example, you can eat asparagus with romesco, spicy zucchini fritters, wild mushroom tartare or pumpkin pancakes. For those who are still afraid of missing something: a small side dish of (responsible) meat or fish is possible.
